Papaya Salad

Another Erin recipe which was full of flavor and color.  A great unique dish.

3-5 fresh chilies
3 garlic cloves
1 yard long bean cut into 1 inch pieces
2 tsp palm sugar
1 tbsp fish sauce
1 tbsp lime juice
1 tbsp dried shrimp

2 to 4 tomato, cut into quarters
4 ounces papaya, shredded
2 ounces carrot, shredded
1 tbsp roasted peanuts


1) Put garlic and chilies into mortar and pound well

2) Add long bean, palm sugar, fish sauce, lime juice and dried shrimp. Mix well together until palm sugar is dissolved.

3) Add tomato, papaya and carrots stirring until all ingredients are mixed well.

4) Arrange on a serving dish and top with roasted peanuts.
