This was another tasty side to Lisa’s summer WDC

Difficulty: Easy
Prep Time: 15 min
Cook Time: 40 min
Total Time: 55 min
Yield: 6-8 servings
Taste: Great


1 bag frozen lima beans
6 ears of corn
1/2 pack of bacon
1 small sweet onion
3 cloves garlic, minced


1) Cook lima beans according to package instructions (boil 40 minutes).

2) Remove husk from corn and boil in a pot of water 20 minutes until kernels are easily pierced with a sharp object.

3) Cook bacon in microwave, oven, or skillet.  Drain and reserve fat.  Slice bacon into 1/4-inch pieces.

4) Saute onions and garlic with 3 tablespoons bacon fat until browned. Add corn and lima beans to onions/ garlic. Salt/ pepper to taste. Add bacon and mix.
