Salted Date (Brownie) Energy Balls

Our good friend Erin brought us back some dates from her trip to Abu Dahbi.  I saw this recipe blip through a feed which looked good.  It is an interesting group of ingredients to yield a brownie-like taste, but it magically works.  The ingredients seemed pretty dry in the food processor, but still held together in a ball.  I made them a second time and added some honey to make them a little more moist which improved it.  These were definitely good.  I made both these and the no bake peanut butter balls for our big trip down to Bend and they were a good variety and nice change of pace from store bought energy bars.

Yield: 10-12 medium balls

INGREDIENTS:

1 heaping cup pitted large Medjool dates (see note below)
1/2 cup Blue Diamond Roasted Salted (or Lightly Salted) Almonds
1/4 cup natural drippy almond butter
1/4 cup flaxseed meal
3 tablespoons high-quality unsweetened cocoa powder
1 teaspoon vanilla extract
Optional: 1/4 teaspoon sea salt (if you like sweet and salty)
Optional: 2 tablespoons of honey

PROCEDURE:

  1. Add pitted dates and almonds to the bowl of a food processor. Process for about 1 minute or until almonds and dates come together well. Almonds should be slightly chunky.
  2. Add in the remaining ingredients: almond butter, flaxseed meal, cocoa powder, vanilla extract and optional sea salt and honey. Pulse until a dough forms. The dough texture should be thick and clumpy. If it isn’t, then add 1 or 2 tablespoons of honey or water.
  3. Roll into 12 medium sized balls. You can also use a medium cookie scoop if that’s easier. Store the energy bites in the fridge or freezer.

Note:
Medjool dates are typically the largest and are sweet, moist, meaty, and firm-textured
