Corn and Green Chile Saute

Like in my Mexican Potatoes recipe, here is another option to a Mexican side dish besides the standards.

Difficulty: Easy
Prep Time: 10 min
Cook Time: 5 min
Total Time: 15 min
Yield: 4 servings
Taste: Good



1-2 roasted peeled green chile
1 medium red onion, chopped
1 10-ounce packages frozen corn, thawed
2 cloves garlic, chopped
kosher salt and black pepper
2 tbs fresh lime juice



1) In a large saute pan add pepper, corn, garlic, 1 teaspoon salt, and ¼ teaspoon black pepper and cook, stirring often, until the corn is heated through, 2 to 3 minutes. Mix in the lime juice.
