Spicy Black Bean Burgers

My summer WDC was one of the first where I didn’t know what to make.  Then I had an amazing idea, then it was 90+ degrees and I couldn’t bare to turn the oven on and cook my friends so I resorted to the grill.  The original recipe called for cooking these in a skillet which I think would be better. I don’t think there was enough moisture to make them good for grilling. I had dusted them with flour before grilling which should have been omitted or perhaps sprayed with cooking spray before placed on grill.

Black Bean Burger Patties

INGREDIENTS
1 tbs olive oil
1 small onion, diced
2 cloves garlic, minced
1 jalapeno pepper, seeded and minced
1 tsp dried oregano
1/2 red bell pepper, diced
1 ear corn, kernels cut from cob
1 (15 ounce) can black beans, drained and rinsed
1/2 cup plain bread crumbs
4 tsp chili powder – can reduce to half to limit spiciness
1 tbs minced fresh cilantro
1/2 tsp ground cumin
1/2 tsp salt
1/2 cup all-purpose flour, or as needed
1 tbs olive oil, or as needed

PROCEDURE

1) If grilling, preheat grill.

2) Heat 1 tbs olive oil in a skillet over medium heat; cook and stir onion, garlic, jalapeno pepper, and oregano until onions are translucent, 8 to 10 minutes.

3) Add red bell pepper and corn into onion mixture until red bell pepper is tender, 2 to 4 more minutes.

4) Mash black beans in a large bowl. I used a potato smasher.

5) Stir vegetable mixture, bread crumbs, chili powder, cilantro, cumin, and salt into mashed black beans.

6) Divide mixture into 4 patties.

7) If pan frying, coat both sides of each patty with flour. Heat 1 tbs olive oil in a skillet over medium heat; cook patties until browned, 5 to 8 minutes on each side.

8) If grilling, omit flour and cook patties until warmed 5 to 8 minutes per side.
