Hummus and Grilled Vegetable Wraps

I’m currently staying in the UK and cooking here is not as easy as I would have thought. The grocery store is an adventure. They don’t have some standard things or they are located with things you wouldn’t have expected. The only peppers I’ve been able to find so far are bell peppers. Or an item is called something else. For example, zucchini is called courguette and molasses is treacle. And everything is measured by weight in grams. Even liquids are measured in grams making cooking based off some of my old recipes somewhat difficult. So it lends to a bit of creative cooking. This is an easy recipe that doesn’t really requiring measuring and would be a good summer grilling recipe as well.

Yield: 4 tortilla wraps
Taste: Good


2 tbs olive oil
2 zucchini, cut lengthwise and sliced
1 medium red bell pepper, thinly sliced
1/2 red onion thinly sliced
1.5 cups bean sprouts
salt and pepper
1 cup store bought hummus or my recipe here
4 tortillas
1/4 cup chopped hazelnuts, pine nuts, or almonds
2 cups spinach
1 large tomato, chopped
3 oz feta


1) Heat a large pan on medium-high. Add oil, zucchini, peppers, onion, and bean sprouts. Sprinkle with the salt and pepper. Cook until tender, about 8 minutes.

2) Spread 1/4 cup of the hummus over each wrap. Sprinkle 1 tbs of nuts on top. Top with one-quarter of the zucchini/pepper mixture, 1/2 cup of the spinach, tomatoes and feta. Roll each of them up and cut in half on a diagonal.
