Lisa’s Bacon Vinaigrette Salad

This is a nice warm salty vinaigrette for a salad. Your salad itself can be pretty versatile with whatever nuts, fruit, cheese you have on hand. Lisa added a cooked egg to each.

Total Time: 35 min
Yield: 4-6 servings

8 pieces of bacon
3 Tbs bacon drippings
1 tsp sugar
2 Tbs shallot
3 Tbs red wine vinegar
1/2 tsp Dijon mustard
3 cups of fresh spinach
1/4 cup slivered toasted almonds
1/4 cup cranberries


1) Cook bacon either in oven (400 degrees F for 15-20 min on a aluminum foil lined baking sheet) or pan fry on the stove top. Reserve bacon drippings for vinaigrette.

2) Heat the bacon drippings, shallot, and sugar together for a few minutes. Turn off heat and add red wine vinegar, Dijon mustard and pour over salad.

3) Top salad with slivered almonds, cranberries, and sliced bacon.
