Mediterranean Couscous Salad

I love how quickly couscous can be cooked. I was looking on the back of the Near East package of couscous I bought the other day and found this recipe and I had pretty much everything I needed to make it. Very easy and flavorful.

Mediterranean Couscous

Difficulty: Easy
Prep Time: 10 min
Cook Time: 10 min
Total Time: 20 min
Yield: 4-6 servings
Taste: Good

1.5 cups water
¼ tsp. black pepper
1 cup couscous
¼ cup lemon juice
3 tbs olive oil
2 large tomatoes, chopped
1 medium zucchini, halved and sliced into 1/4 –inch pieces
½ cup loosely packed shredded basil leaves
1/3 cup sliced green onions
¾ cup crumbled feta cheese
Optional serving suggestion:
Serve on top of pita or bed of lettuce

1) In a medium saucepan bring water and pepper to a boil. Stir in couscous, remove from heat, and cover.
2) Let stand for 5 minutes then fluff couscous with fork.
3) In a large bowl, combine couscous, lemon juice, and olive oil. Add tomatoes, zucchini, basil, and green onions. Can serve warm or cold. Stir in cheese before serving.
