Cabbage Slaw

Whenever I get fish tacos in a restaurant they are usually served with a delicious coleslaw topping.  I have made a couple of fish taco recipes (one posted here), but I’ve always lacked this important flare.  I made this coleslaw the other day which opened my eyes to how ridiculously easy it is to make and how much better this is than the store bought crap that contains much more mayo-based dressing.  This is nice and light and with very little ingredients it is surprisingly flavorful! And with summer just around the corner this can also make a nice side dish to a BBQ.

Slaw 1

Prep Time: 15 min
Cook Time: 0 min
Total Time: 15 min
Yield: 3 cups
Taste: Good

1/2 small head of green or red cabbage (about 14 ounces), cored and thinly sliced
1/2 medium red onion, thinly sliced
1/4 cup coarsely chopped fresh cilantro
juice of 1 lime
1 tbs olive oil
salt and pepper to taste


1) Combine the cabbage, onion, and cilantro in a large bowl and squeeze a lime half over it. Drizzle with the remaining 1 tablespoon oil, season with salt and pepper, and toss to combine. Taste and add more salt and pepper if necessary; set aside until just prior to serving.

2) Taste the slaw again and season as needed with more lime juice.
