Mash Potatoes with Pecorino

Pretty standard mash potato recipe with the addition of some cheese.

Difficulty: Easy
Prep Time: 20 min
Cook Time: 20 min
Total Time: 40 min
Yield: 3-4 servings
Taste: good

1 lb of russet potatoes, peeled and quartered
1/4 to 1/2 cup milk
2 tbs butter
1/4 cup pecorino cheese
salt and pepper to taste
optional: paprika, chives

1) Place peeled, quartered potatoes in a large pot and fill with water until potatoes are covered.

2) Bring pot to boiling and then reduce to simmer, cover, and continue to cook for 20 minutes until tender.

3) Once tender, drain potatoes and return to original pot and mash with potato masher.

4) Add butter and slowly add milk in 1/4 cup increments mashing potatoes in between additions to preferred consistency.

5) Stir in 1/2 cup grated pecorino cheese, salt, and pepper and any optional ingredients.
