Aaron’s Yellow Cake and Chocolate Frosting Bday Cupcakes

So I had three days in a row of baking.  This was another bday baking.  I used the remaining frosting from Mark’s bday cake (which was originally Jeff’s bday cake frosting).  And tried a new yellow cake recipe.  Results: still like the combo used on Mark’s cake best.

Note the recipe below yields 24 cupcakes or can be made into two 9-inch cakes for layering.

Aaron Birthday Cupcakes

Difficulty: Easy
Prep Time: 30 min
Cook Time: 25 min
Total Time: 1 hour plus time for cupcakes to cool
Yield: 24 cupcakes or two 9-inch layer cakes
Taste: Good

CAKE Ingredients:
3 cups cake flour
3 1/2 tsp baking powder
1/2 tsp salt
3/4 cup unsalted butter, room temperature
1 1/3 cups granulated white sugar
6 large egg yolks
1 cup milk
2 tsp pure vanilla extract

FROSTING Ingredients & Procedure go to Jeff’s Bday Cake.  You can half the frosting recipe there for 24 cupcakes.

Procedure:
CAKE:

1) Preheat oven to 350 degrees F. Line muffin tin liners.

2) In a bowl sift or whisk the flour with the baking powder, and salt.

3) In the bowl of your electric mixer, or with a hand mixer, beat the butter until soft and creamy (about 1-2 minutes). Gradually add the sugar and beat until light and fluffy (about 3-5 minutes).

4) Add egg yolks, in two batches, beating well after each addition. Scrape down the sides of the bowl as needed. Add the vanilla extract and beat until combined.

5) With the mixer on low speed, alternately add the flour mixture (in three additions), and milk (in two additions), beginning and ending with the flour.

6) Fill muffin cups 2/3 full with batter.  Bake for 15-20 minutes or until a toothpick inserted into the center of the cupcake just comes out clean.

7) Cool completely before frosting.
