January 10, 2014

Easy peasy recipe to compliment any Italian dinner.

Garlic Bread

Difficulty: Easy peasy
Prep Time: 15 min
Cook Time: 15 min
Total Time: 30 min
Yield: 8ish servings
Taste: Good

2 tbs unsalted butter
2 tbs olive oil
2 medium garlic cloves, minced
1 tbs finely chopped fresh Italian parsley leaves
1/2 tsp kosher salt
1 loaf Italian or French bread (about 1 pound), cut in half horizontally
1/2 cup shredded cheese (Mozzarella or Romano)
3 tbs of grated Parmesan cheese

1) Preheat oven to 425°F and arrange a rack in the middle. Line a baking sheet with foil; set aside.

2) Place the butter in small microwavable dish and heat in microwave until melted. Caution: butter can explode and make a big mess either cover or watch closely. Alternatively, you can heat butter on the stove top.

3) In a small bowl add melted butter, olive oil, garlic, parsley, and salt and mix.

4) Place the bread cut-side up on the baking sheet. Spread the butter mixture in an even layer on the cut sides of the bread.

5) Sprinkle cheese evenly over the bread.

6) Bake until the bread is golden brown on top, about 15 minutes.
Let cool for 5 minutes before slicing. Serve warm.
