Shrimp Salad

This is an easy, healthy, green meal we needed after a long holiday break of doing way too eating. You can cheat and buy cooked shrimp and just heat them up in the skillet according to the procedure below.

Shrimp Salad

Difficulty: Easy
Prep Time: 20 min
Cook Time: 10 min
Total Time: 30 min
Yield: 2-3 full servings, more if used as a side salad
Taste: Good

For Shrimp
1/2 lb of medium shrimp (can do cooked, tails off would be easier)
1 tbs butter
2 cloves garlic, minced
1 tbs parsley
salt to taste
pepper to taste
juice of 1 lemon
1/4 tsp of red pepper flakes

For Remainder of Salad
4 cups field greens
1/2 small red onion, sliced
1/2 red bell pepper, chopped
1/4 cup slivered almonds
1/4 cup feta cheese
your favorite salad dressing or I have a recipe here

1) To cook shrimp (or heat and season if you already bought it cooked) place a saute pan on medium heat add butter. Once butter has melted add shrimp, garlic, parsley, salt, pepper, lemon juice, and red pepper flakes. Cook shrimp for 8-10 minutes until they are pink
2) Remove shrimp from heat and remove tails.
3) In a saute pan add red onions and cook until tender. Cooking the onion will take the bite out and make it a bit sweeter.
4) In a large bowl combine field greens and salad dressing. Once mixed add pepper, almonds, cheese, and shrimp.
