Tomato Basil Veggie Pizza

Pizza is one of the rare meals that can cost just as much to make as it does to order, but to have the ability to choose your own (and as many) toppings as you want is usually worth it.   Of course you can add/subtract toppings I suggested below, but I usually do something around this sort. One of these days I’ll get around to finding a good (easy!) dough recipe until then, I do store-bought.  I would recommend using the oven temperature and cooking time suggested on the pizza dough you buy.

Veggie Pizza

Cook Time: 10 Min
Total Time: 40 Min
Yield: 3-4 servings
Taste: Good

Ingredients:

2 tomatoes, chopped
1 teaspoon salt
8 ounces shredded mozzarella cheese, divided
1/4 red onion, coarsely chopped
1/4 cup chopped fresh basil
1/2 teaspoon ground black pepper
2 tablespoons olive oil
2 fresh jalapeno peppers, seeded and chopped
1/2 cup kalamata olives, sliced
3/4 cup pizza sauce
13.8 oz store-bought pizza dough
1/4 cup grated Parmesan cheese

Procedure:

1)  Preheat oven to 400 degrees F.
2) Mix the tomatoes and salt in a mesh strainer. Let mixture sit and drain for 5 minutes.
3) Spray a small pan with cooking spray and saute red onion and jalapeno until tender. You could skip this step, but I find raw red onion and pepper to have to much of a bite to it. Sauteing mellows the flavor.
4) Combine the drained tomatoes, 8 ounces of mozzarella cheese, red onion, basil, pepper, olive oil, jalapenos, olives, in a bowl.
5) Spray large baking sheet with cooking spray.  Unroll pizza dough into a thin rectangular layer and place on baking sheet.
6) Spread the pizza sauce evenly onto the pizza crust.
7) Distribute tomato mixture over the pizza crust evenly.
8) Bake pizza in preheated oven until crust is golden brown, 8 to 10 minutes, then broil for 1-2 minutes to melt toppings/cheese. Watch closely when broiling!
