Swedish Meatballs

Ahh, Swedish meatballs: an oh so common meal from all of those Scandinavian Minnesotans.  I don’t like gravy so I just make the meatballs and serve with egg noodles and a white pasta sauce. The recipe below is just for the meatballs themselves.

Yield: 30 meatballs (4-6 servings)

Sweedish Meatballs

2 slices white bread
1/4 cup milk
1 tbs olive oil
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
1.5 lbs ground turkey
2 large egg yolks
1/2 tsp black pepper
1/4 tsp ground allspice
1/4 tsp freshly grated nutmeg

1) Preheat oven to 400 degrees F.
2) Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
3) In a 12-inch straight sided saute pan over medium heat, add 1 tbs of olive oil. Add the onion and a pinch of salt and cook until the onions are soft. Remove from the heat and set aside.
4) In a large bowl, combine the bread and milk mixture, ground turkey, egg yolks, black pepper, 1 tsp of kosher salt, allspice, nutmeg, and onions. Mix well.
5) Make meatballs in 1 to 1.5-inch round balls using your hands and place on a sheet pan that has been lightly covered with cooking spray.
6) Bake meatballs in oven for 20 mins or until thoroughly cooked.
