Mozzerella and Penne Salad

I had this at Whole Foods once or twice and it was delicious. I found the following recipe that replicates it pretty well. It’s also a good dish to bring to a potluck.

Mozzarella Penne Salad

Prep Time: 30 min
Cook Time: 15 min
Total Time: 45 min
Yield: 6-8 servings
Taste: Very good

Parmesan Dressing
1/4 cup grated Parmesan cheese
1/2 cup chopped fresh flat-leaf parsley
1/2 cup low-fat mayo
1/4 cup white wine vinegar
2 cloves garlic
pinch cayenne pepper
salt and pepper to taste

12 ounces penne pasta
3 cups packed baby spinach
12 ounce jar roasted red peppers, drained and diced
4-6 ounces mozzarella cheese, diced

1) For dressing: combine Parmesan cheese, parsley, mayo, vinegar, garlic, cayenne, salt, and pepper in a food processor and process until the dressing is smooth. Store in the refrigerator until ready to served. The dressing can be made up to two days ahead of time.
2) For salad: cook pasta in a large pot of salted water until tender. Drain pasta into colander and run cold water over it and drain well.
3) In a large mixing bowl combine cooked pasta, spinach, roasted red peppers and mozzarella. Dress the salad right before serving.
