Green Chile Stew

Here’s a good winter warmer recipe from the kitchen of Jim. You have a couple of different options for how to make it: ground turkey or chicken, in a large pot or in a crockpot. Be warned this can be pretty spicy.

Green Chili Crockpot

Prep Time: 25 min
Cook Time: 45 min if cooking on the stove top, or 5-6 hours in a crockpot
Total Time: 1 hr 5 min to 6 hours
Yield: 6ish servings
Taste: Very Good

1/2 lb ground turkey or chicken breasts
3 large potatoes, diced
3 large carrots, sliced
2 jars (16 oz each) of green chili sauce
1 box (32 oz) chicken broth
Serve with warm tortillas or tortilla chips, and optional shredded cheddar cheese and sour cream.

1) If using ground turkey, brown turkey in a large pan and drain any excess fat. If using chicken breasts boil chicken for 30-45 minutes and shred with a fork after it is cooked thoroughly.
2) Wash and optionally peal potatoes. Cut potatoes into small cubes. Peel carrots and slice.
3) For stove top option: potatoes, carrots, green chili sauce, and chicken broth into large covered pot and cook medium heat for 30 min to 45 min until potatoes are soft.
4) Once veggies are soft add cooked meat.
5) For crockpot option: place cooked ground turkey or uncooked cubed chicken into crockpot along with potatoes, carrots, green chili sauce, and chicken broth. Cook on medium for 5-6 hours until potatoes are soft.
5) Serve with warm tortillas.
