Pumpkin Bars (or cupcakes) with Cream Cheese Frosting

Happy Halloween everyone! Well, a few days late that is… I made these for a Halloween party last weekend. Good thing Thanksgiving is pumpkin themed as well and right around the corner so this is still a relevant post:) The original recipe called for Pumpkin Bars and I thought cupcakes would be better for a party so I did that instead.

Pumpkin Cupcakes

Difficulty: Easy
Prep Time: 30 min
Cook Time: 20-30 min
Total Time: 50-60 min
Yield: 48 bars or 24 cupcakes
Taste: Very Good

Ingredients:
Cake
2 cups all purpose flour
1 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
2 cups granulated sugar
3 large eggs, beaten
1 cup vegetable oil
1 cup canned pumpkin (15 oz)
1 cup walnuts, chopped
1 cup chocolate chips (optional)

Procedure:
1) Pre heat oven to 350 degrees F,
2) Combine flour, cinnamon, baking soda, salt, and sugar. Stir in beaten eggs, oil, and canned pumpkin until thoroughly combined. Stir in chopped walnuts (and optional chocolate chips).
3) Spread batter into an ungreased 15 x 10 x 1-inch baking pan. If you are making cupcakes pour batter two-third full into a lined muffin tin.
4) Bake in oven for 30 min for pumpkin bars or 20 min for cupcakes.
5) Cool and frost with cream cheese frosting (recipe below)

Cream Cheese Frosting

Ingredients:
6 ounces cream cheese, softened
2 cups powdered sugar
6 tbs butter or margarine, softened
1 tsp vanilla extract

Procedure:
1) Combine frosting ingredients in a small bowl, mix until well blended.
