Chocolate Cupcakes – Ninja Style!

I love to bake. Especially cakes, but for some reason I’ve never been as fond of making cupcakes. Maybe because frosting and/or decorating each individual cupcake seems a bit tedious. But these cupcakes were fun to make and decorate as they were for a friend of mine’s baby party, or shall I say Baby Ninja Party.

I used my friend Laura’s awesome chocolate cake recipe and my frosting recipe from Jim’s birthday cake.

I was in a bit of a hurry when making these so I didn’t totally let the frosting sit for the recommended 30 min. So it wasn’t as solid as it was last time like a normal butter cream. The next day it firmed up though.

Note: the cake batter for this recipe is originally for two 8-inch layer cakes so you can do that instead.

Ninja Cupcakes

Instructions for only cupcake (or two 8-inch cakes) is below. For frosting recipe go here

Prep Time: 25 min
Cook Time: 15-40 min (depends on if you are making cupcakes or two cakes)
Cooling Time: 30 min
Total Time: 70-95 min
Yield: 2.5 dozen cupcakes (or two 8-inch layer cakes)
Taste: Great

Ingredients for cupcake batter:
Butter, for greasing the cupcake tin or use liners
2 cups all-purpose flour, plus more for pans
2 cups sugar
3/4 cups plus 2 tbs good cocoa powder
1.5 tsp baking soda
1.5 tsp baking powder
1 tsp kosher salt
3/4 cup buttermilk, shaken
1/2 cup sour cream
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
2 tsp pure vanilla extract
1 cup mini chocolate chips
1 cup freshly brewed hot coffee

Ingredients for Ninja decoration:
Package of Oreo cookies
Chocolate sprinkles

Cake Batter Procedure:
1) Preheat the oven to 350 degrees F. Butter and flour cupcake tin or line with muffin cups. If you are you want to make a cake instead, butter two 8-inch round cake pans. Line with parchment paper, then butter and flour the pans.

2) Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined.

3) In another bowl, combine the buttermilk, oil, eggs, sour cream, and vanilla.

4) With the mixer on low speed, slowly add the wet ingredients to the dry. Add chocolate chips and with mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula.

5) Pour the batter into the prepared pans and bake for 15-18 minutes for cupcakes and 35 to 40 minutes if you are making cake. Bake until a toothpick comes out clean when inserted in the middle. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely.

6) To make the ninja decorative topper carefully split Oreo cookies so that cream filling is completely on one side of the Oreo. Use a sharp knife to remove the top portion of the cream. Place two chocolate sprinkles on the cream for eyes.
