Salmon with Pesto and Cherry Tomatoes

Looking through my blog, I couldn’t beleive I didn’t have a fish recipe yet! Living in the Pacific Northwest I should probably be ashamed of this. So here goes, I’ll start it off right by giving you a salmon one; the most popular fish here. I like this recipe because it’s super simple, quick, and healthy.

Salmon with Pesto

Difficulty: Easy
Prep Time: 10 min (if pesto is premade)
Cook Time: 10-20 min
Total Time: 30 min
Yield: 3 servings
Taste: Good

Ingredients:
– 1 lb salmon filet, with skin left on one side
– 1/2 cup pesto
– 1/2 cup cherry tomatoes

Procedure:
1) You can either bake or grill the salmon. If baking, preheat oven to 350 degrees F. If grilling, preheat grill on med-high.
2) If baking, line a baking dish with tinfoil (this will make for easy cleanup). Place salmon skin side down on baking dish and place a thick coat of pesto over the top of the salmon.  If grilling just use a plate to prepare the salmon and then transfer just the salmon to the grill.
3) Slice cherry tomatoes in half length-wise and place cut side down on top of the pesto covered salmon.
4) Transfer the salmon to the oven and bake for 20 minutes until slamon flakes with a fork. If grilling, transfer salmon straight to grill (no foil needed) and cook on med-high heat for 10 min-15 min.
