Grilled Chicken with Spicy Pineapple Mango Salsa

Now that mangos are showing up at the grocery store I decided to make this recipe again. This is a great recipe for spring/summer.  The salsa takes a little bit of time to pull together, but it makes for a tasty refreshing dinner.  Make sure your mangos are ripe which will make them easier to cut.   My grocery store didn’t carry a chipotle pepper so I used a habanero pepper. It wasn’t very spicy for me so next time I’ll use 2 or add in a jalepeno as well.It makes a good amount of salsa so I used the remainder on quesadillas the next night.

Total Time: 1 hr 20 min
Yield: 4 servings of chicken, but 6-8 servings for salsa

Spicy Pineapple Mango Salsa


4 large boneless chicken breasts

2 tbs minced fresh garlic
2 tbs fresh minced thyme
2 tbs extra virgin olive oil
1 tbs black pepper
pineapple juice, from crushed pineapple
1 pinch salt

1 chipotle chile, seeded & chopped
1 jalepeno (optional for extra heat)
1 small red pepper, diced
1 garlic clove, minced
1/2 cup fresh cilantro or 1/2 cup fresh parsley leaves, coarsely chopped
1/2 vidalia onion, finely chopped
1 (15 ounce) can crushed pineapple, drained (save juice for marinade)
2 mango, diced
2 tablespoons lime juice
1 teaspoon grated fresh ginger
salt, if needed taste before adding

1) Mix maridande ingredients together in a tupperware container large enough to hold the chicken.
2) Flatten chicken with a meat tenderizer. Place boneless chicken breast in the container with marinade and mix. Let sit for at least 30 min.
3) Rub grill with an oil.
4) Heat the grill on high for 5 minutes.
5) Place the chicken breast on the hot grill, reduce the heat to medium and grill for 5 minutes.
6) Turn the chicken after the 5 minutes and grill another 5 minutes.
7) Reduce the heat to medium low and finish cooking the chicken for another 5 minutes.
8) To make the salsa mix all ingredients and chill till ready to serve. If you don’t know how to cut a mango this webpage might help.
9) Scoop salsa onto plate and top with half chicken breast.

Do cook the chicken in the oven instead, preheat oven to 400 degrees F. Bake chicken for 20 mins flipping chicken halfway. Cook until center is no longer pink.
