Roasted Potatoes

Yield: 2-3 servings
Taste: Good

Ingredients:
2 large baking potatoes
1-2 tbsp olive oil
½ tsp kosher salt
½ tsp fresh ground pepper
2 cloves of garlic, minced
2 tbsp of chopped rosemary

Procedure:
1) Wash potatoes (optional to peel) and cut into ½-inch cubes
2) In a large frying pan heat olive oil on medium heat
3) Place potatoes, salt, pepper, garlic, and rosemary into pan
4) Cook potatoes until tender 10-15 minutes. Stir potatoes frequently. I usually place the cover on the pan while cooking the potatoes to speed up their cooking. I think it makes them softer as well.
