Buffalo Chicken

Buffalo Chicken SandwichAt my old favorite bar in Wallingford my favorite food item was their buffalo chicken sandwich. Every now and then I get a craving for their sandwich and instead of always going there I have this recipe to satisfy my craving.

Difficulty: Easy
Prep Time: 15 min
Cook Time: 10 min
Total Time: 25 min
Yield: 4 servings

Ingredients
• 4 chicken breasts
• Kosher salt and freshly ground black pepper to taste
• Olive oil, for greasing grill grates
• 1/2 cup hot sauce (recommended: Frank’’s Hot Sauce)
• 3 tablespoons butter
• 1 teaspoon smoked paprika
• 1 teaspoon apple cider vinegar
• 1 clove garlic, finely minced
• Optional blue cheese, coleslaw, and French bread for sandwich

Procedure
1) Preheat your grill to medium-high heat.
2) Pound each chicken breast out to 1/4-inch thickness between 2 pieces of parchment paper. Season with salt and pepper.
3) Using a clean tea towel, oil the grill grates.
4) Grill the chicken on each side until golden and cooked through, for 3 to 4 minutes.
5) While the chicken is grilling, add the hot sauce, butter, paprika, apple cider vinegar, and garlic to a medium saucepan. Either place the pan on the grill grates and stir to melt all together or use the stove top. Dip the chicken into the saucepan to coat and then grill for another minute on each side. Remove the chicken from the grill and place on a platter.

Cooking Option: You could substitue grilling the chicken with broiling it in the oven.
Serving Option: Top each breast with blue cheese and coleslaw and place on a French roll for a great sandwich
