Broccoli Crunch Salad

Broccoli Crunch SaladI was at a potluck the other day when I tasted a version of this broccoli salad.  I was impressed with how good it was given the mishmash of ingredients.  I had no idea who made it or what the exact recipe was.  But I did a little interneting and came up with a version I thought was pretty tasty. Refrigerate after preparing. Actually tastes better the next day once the broccoli has absorbed some of the dressing.

Yield: 6 servings
Taste: Good

Ingredients:
3 heads of broccoli, trimmed and divided into bite-size pieces
1 half med red onion, small dice
6 slices bacon, fried and crumbled
1/2 cup cashews, roughly chopped
1/2 cup dried cranberries (I like Crasins Pomegranate flavor)
1/2 cup mayonnaise
1 tbs sugar
3.5 tbsps vinegar
1-2 tsp of Dijon mustard

Procedure:
1)  Combine the broccoli, onion, bacon, cashews, and cranberries in a large mixing bowl.
2)  Mix mayo, sugar, vinegar, and mustard together and pour over the vegetables. Toss together and refrigerate for a day for best flavor.
