Sweet & Spicy Sweet Potatoes and Butternut Squash

When I made my Beef and Butternut Squash Stew the other day I had too much sweet potatoes and butternut squash.  I have roasted sweet potatoes before and thought these two together would be good.  I modified a couple recipes I found online to get what I have below.  Seems too good to be eating vegetables, it’s more like candy:)  It’s now one of our favorite winter side dishes.

Prep Time: 20 mins
Cook Time: 40
Total Time: 1 hour
Yield: 4-6 servings
Taste: Very Good


1 large sweet potato
1 med-small butternut squash
2 tbs of olive oil
2 tbs of honey
1 tsp lemon juice
Cayenne pepper – to taste (and heat tolerance level)
Cinnamon – to taste
Salt – to taste

1)  Preheat oven to 350 degrees F.
2)  Peel and cut sweet potato and butternut squash into 1-inch cubes
3)  Place cut vegetables on a 13×9 inch baking sheet.
4)  Mix olive oil, honey, and lemon juice in a small bowl.  Cover vegetables with mixture and toss to coat.
5)  Sprinkle vegetables with Cayenne pepper, cinnamon, and salt to taste.
6)  Bake for 45 minutes, or until tender, tossing occasionally
