Banana Bread

My Mom’s made this recipe ever since I can remember. I’ve always hated bananas, but love banana bread. This is a great super moist recipe. I haven’t tasted a better homemade recipe yet.

Difficulty: Easy
Prep Time: 20 min
Cook Time: 50-60 min
Total Time: 1 hr 10 to 20 min
Yield: 2 loaves
Taste: Very Good

Ingredients:Banana Bread
1.5 cups sugar
½ cup shortening
½ cup buttermilk
2 eggs, beaten
1 tsp soda
3 bananas
2 cups flour
Chopped Pecans (optional)
Chocolate Chips (optional)

Procedure:
1) Preheat oven to 325 degrees F.
2) Mash 3 bananas with fork or potato masher
3) Mix all ingredients in a medium size bowl with an electric mixer.
4) Divide batter evenly into two 8.5 inch (ungreased and unfloured) loaf pans
5) Bang loafs on counter top to remove air bubbles
6) Let stand for 20 min prior to putting in the oven
7) Bake loafs for 50-60 min until toothpick entered in center comes out clean.

Variation:
You could add chopped pecans to the batter or just to the top of the loaves prior to baking or add chocolate chips to the batter for a little different twist.
