Mother Margaret’s Meatloaf

Meatloaf, why is it something that we dread to have again and again as kids, but as adults it’s something that (at least Jim) asks for regularly?  This came from my mother’s kitchen.  I changed it up a bit with using Italian seasoned ground turkey instead of ground beef.

Prep Time: 20 min
Cook Time: 1 hour 15 min
Total Time:  1 hour 25 min
Yield:  4
Taste: Very Good

1 lb lean Italian seasoned ground turkey
1 egg, beaten
1 cup crushed crackers ~20 crackers
8 oz can tomato sauce
1 small onion, finely chopped

1)  Preheat oven to 350 degrees F
2)  Reserve 2 oz of tomato sauce for the top
3)  Mix all ingredients in a bowl and put into a loaf pan.
4)  Spread remaining tomato sauce on top of meatloaf and sprinkle with pepper.
5)  Bake for 1 hour (in Heidi’s HOT oven) to 1 hour and 15 min for normal ovens.
