Red Wine Vinaigrette

I made a steak salad the other night and realized I didn’t have a good dressing on hand to go with it.  I found this quick and easy recipe online and ended up halving it for our dinner and had a little dressing left over for a lunch salad the next day.  The dressing was even better the day after.  Next time I’ll make a big batch to keep in the fridge for multiple uses.

Total Time: 10 min
Yield:  1 2/3 cup
Taste: Good

1/2 cup red wine vinegar
3 tablespoons lemon juice
2 teaspoons honey
2 teaspoons salt
Freshly ground black pepper
1 cup olive oil

Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. 

Note: I just put the ingredients in a bowl and whisked in the olive oil and it seemed to work well that way too. Washing a blender is more work than I needed.
