Rosemary Roasted Fingerling Potatoes

This a good easy recipe to make potatoes a little fancier. I saw another recipe after I made this one xmas potatoesthat calls for adding blue cheese crumbles and bacon. I might try that the next time I make this dish.

Cook Time: 20 min
Total Time: 40 min

Taste: Very Good

Ingredients
2 lbs fingerling potatoes
1 tbs olive oil
¼ tsp salt
¼ tsp peper
1 tbs fresh rosemary, chopped

Procedure:
1)  Preheat oven to 425 degrees F
2)  Wash potatoes in cold water and pat dry.  Cut length-wise into ½ inch slices
3)  Combine olive oil, salt, pepper, and chopped rosemary in a large bowl and mix well.  Add fingerlings and stir to coat thoroughly
4)  Place potatoes in a single layer on a baking sheet.  Roast in the middle of the oven for 20 minute, or until golden brown and tender.
5)  Remove from the oven, garnish with sprigs of fresh rosemary and serve immediately.
