Mini Caprese Salad

This is a good potluck dish.  It is best to eat the day of making it since the oil tends to harden when you keep it in the fridge for over 24hours.

Prep Time: 20 min
Cook Time: 0 min
Total Time: 20 min
Yield:  6-8 servings
Taste: Good

 

 

Ingredients
8 oz fresh mozzarella cut into bite size chunks
15 oz cherry tomatoes (2 cups) sliced in half
1/2 cup shredded fresh basil leaves
1/3 cup olive oil
2 tbs balsamic vinegar
1 tsp red pepper flakes
1 tsp garlic, minced
1/2 tsp garlic salt
1/2 tsp dried oregano

Procedure:
1)  In a large glass bowl combine mozzarella, tomatoes, and basil
2)  In a separate small bowl, blend olive oil, vinegar, red pepper flakes, garlic, salt, and oregano
3)  Stir the dressing into the salad.
