Fresh Tomato Salsa

A garden inspired recipe for when my tomatoes finally started growing.

Difficulty: Easy
Prep Time: 15 min
Cook Time: None
Total Time: 15 min
Yield:  4-6 cups
Taste: Mediocre

6-7 medium-size fresh tomatoes, diced
1 large onion, diced
1 bunch fresh cilantro, finely chopped
6 cloves garlic, minced
2 jalapeno chile peppers, finely diced
Juice of 1 lime
Coarse salt to taste

1)      Chop all ingredients as directed.   Be sure to remove stems, ribs, and seeds from chile pepper.
2)      In a large bowl combine tomatoes, onion, cilantro, garlic, chile pepper, salt, and lime juice.
3)      If salsa is too hot add more chopped tomato, if not hot enough add more chile pepper.
4)      Let sit for 1 hour for flavors to combine.  Can pour off some juice if there is too much settled at the bottom.

Notes:  First time I only had 1 chile pepper and was not hot enough for me, but might be good enough for you mid-westerners.  Next time I’ll use two.
